so today we had a snow day… but so far it’s been a snow day without the snow. but it also meant that my friend and I had the time to make a big breakfast around noon. which means we had brunch! and that is the best thing about today.
my friend made her mother’s famous crustless quiche. it is seriously the best egg pie ever made.
also, it’s foolproof. so give it try, I promise you won’t regret it!
2 cups milk
here’s where it gets fun with the ingredients:
1 1/2 cup shredded cheese – any kind, get creative
any kind of vegetables (think omelet ingredients)
breakfast meat, if that’s your thing
here’s a few proven ingredient combinations:
1. swiss cheese and bacon, hands down my favorite quiche ever.
2. swiss cheese, spinach, bell pepper and bacon, today’s choice.
3. swiss cheese and spinach, solid vegetarian option.

whisk eggs, milk, and bisquick together. add cheese, vegetables, and meat of choice. pour in a glass or ceramic pie dish and bake at 350 degrees for 50 minutes.
p.s. you can also make mini quiches in muffin tins… just saying. cook those for about 25 minutes.
