spinach and artichoke dip

note: this post was majorly delayed because I was unhappy with the end result. now it’s perfect. enjoy!!

I have a problem with cheese. and bread.

I love anything with cheese and/or bread.

so of course I love spinach and artichoke dip. because you get cheese in the dip and bread for the dipping.

spinach and artichoke dip

adapted from Closet Cooking

12 ounces frozen spinach (at kroger, that’s one kroger brand bag), thawed and chopped coarsely
1-14 ounce can artichoke hearts, chopped coarsely
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise (plus some if you like mayo)
1/2 cup shredded mozzarella
1/2 cup shredded parmesan
tablespoon of garlic

preheat oven to 350 degrees. mix all ingredients well and bake until bubbly, about 20 minutes. add some more cheese on top if you wish and bake until melted.

serve with crackers, tortilla chips, or bread. or all three. or veggies. that works too.

and I actually used 3/4 cup of each cheese simply because you can never have enough cheese. plus some more. but normal people would probably think 1/2 cup of each cheese is a plenty. obviously, I am not normal.



p.s. the just spinach version of this is wonderful as well. just add a little more spinach and cream cheese/sour cream.
